Our Story
Allusion Brewing Company began with a simple belief: that the best drinks and the best breads come from the same place — patience, craft, and a willingness to slow down.
Our brewmaster experiments with local ingredients and unconventional techniques, while our bakers start every morning before dawn. The result is a taproom where a barrel-aged stout sits comfortably beside a warm sourdough boule, and every guest is treated like a regular from the start.

American Pale Ale · 5.4% ABV
Crisp and sessionable with notes of citrus peel and toasted grain. Our most popular pour for a reason.
Oatmeal Stout · 6.8% ABV
Dark chocolate, espresso, and a velvet mouthfeel. Aged on oak for six months — rich without being heavy.
Wild Ale · 5.1% ABV
Farmhouse yeast, wild fermentation, and a whisper of raspberry. Bright, tart, and quietly complex.
Helles Lager · 4.9% ABV

Our ovens fire at 4 AM. Every loaf, roll, and pastry is mixed, shaped, and baked by hand — no shortcuts, no preservatives, no compromises.
